Khasta Dal Kahori




Ingredients :

For Daugh:
All purpose flour (Maida)
Refined oil
Salt

For stuffing:
Soaked Moong Dal(without skin)
Gram flour(Besan)
Chilly Powder
Salt
Garam Masala
Whole corriander

Oil for frying

Preparation:
1. Prepare dough using Maida. Keep 3:1 ratio of Maida n oil.
2. Take Maida , add oil n salt to it. Make sure dough is tight. While preparing dough add water in small amount so that dough consistency can be checked often.
3. Once prepared cover it with a thin cloth and leave for 15-20 mins.
4. Now put little oil in a small pan for preparing stuffing. Add whole corriander seeds, let it splutter. Add Dal to pan and let it cook keep mixing it in the pan and put rest of the masala as per the taste. Add Besan also at same time. Let it cook for 10 mins Max else it will become too crispy.
5. Let the prepared mixture cool and make small balls.
6. Now take small piece from dough, make a bowl kind of shape in it and put ball of misture in it. Cover its opening and make a ball again.
Press like poori wiht the hand.
7. Switch on the flame of oil for frying and put Kachori in it. Let it dry until golden brown.



Tips:
- Maida n oil ratio should be well else it won't become fluffy
- Kachori should be put in oil when it is cold. Kachori will cook as n when oil gets heated.
- while preparing Kachori Make sure dough layer is not very thick else it won't cook well from inside.
